The name "Israel" was a "common" WASP name in the 19th century (and before that). Just like names like "Levi" and others. I doubt Stevenson was even thinking about anything Jewish. He just picked a name that was around at the time."Israel" can even be Jewish as a last name! The mother of actor Ian Somerhalder was born Edna Israel, but is not Jewish.

Edna is a Jewish name too... So Edna Israel is very JEWISH! :)
Clearly, even if they do not practice the jewish religion, they still have jewish heritage.
